In some thread someone said that certain clients, among which Voyager, were able to block whole instances. I’m not sure it’s true. Is this possible? And if so, how could I do it?

Connect can do that. It hide all the posts from this instances and for the comments of people from this instance in another post it show “filtered comment from xxxx instance” with a button to show it.
