If you wanna find communities (subs), search through the web UI with the full URL of that community (https://some.instance.com/c/communityname). That’s the most reliable way to actually find the community you’re interested in. The search button in the apps is not reliable at all at the moment.

The closest I can think of is to save a post by someone then regularly user that you access their profile and see what else they post.
Yeah, Lemmy currently doesn’t support following users, but it’s planned and should be available in the near future (probably a month or so).

Yeah im brand new to this so I haven’t figured out much yet… is there a collective lists of nsfw instances?
So far, the only one I know of that is exclusevly NSFW is lemmynsfw.com. Some instances allow NSFW content, but they’re not exclusevly NSFW.
