Usually you can press F5 to refresh. I can’t even find a button. How can you refresh the data from online accounts?

In which Gnome application? Most have a refresh option in their overflow menu.
in > settings > Online Accounts
That is the wrong place. Go to the respective application, and use its refresh option.
