My actual favourites would be weevils. There are thousands of different types, all with the same basic shape.

I’d say isopods… but… they’re crustaceans, not insects, and they got way more than six legs, so not bugs really.
So… bristletails. They like leaf litter or sandy rocky soils. Eating algae, lychens, and general detritus. Some have notably adapted to digesting cellulose, a rare capability in animals (most animals who eat cellulose rich plants have some bacteria that do the digestion for them).
They’re also some of the most basal insects, having diverged from the rest of the group around 400 million years ago. They’re a distinct lineage without anything particularly close to them. A little evolutionary island like tuatara or platypuses.
Well, I consider isopods bugs too.
Can I say jumping spiders? Technically not a bug, but also not a tiny adorable kitten or puppy that eats flies.
The wheel bug! My partner stumbled across it during field work and sent a picture and we eventually identified it. It looks like it has a gear embedded in its back. I just think they’re neat.

Another favorite is fireflies.
Honorable mention to beetles generally as folding wings are fascinating.
Assassin bug yaaaaaaaas 💚
Praying mantis are fun to play with if you come across them. They can be really inquisitive and will happily accept “gifts” if you give them a grasshopper or a fly. They’re absolutely brutal when they eat.
I caught one as a kid. Kept it for about a day and then released it. I fed it a grasshopper and it removed the head. Very cool experience overall.

Assassin bugs. I love watching them hunt for pest insects.
Aside from what was already mentioned; lacewings, butterflies, carpenter bees, orb weavers, and (checked the rules first) slugs!
There’s a whole lil family of leopard slugs on my front porch when it’s warm out after a rain and I love seeing them do their thing. They make their way up the steps to munch on leftover cat food then chill out on the door and siding until about sunrise to return to the soil.
